90 ton challenge
Women of the ELCA partnered with
Lutheran World Relief
in promoting fair-trade coffee. The 90 ton challenge
sold over 90 tons of Equal Exchange fair trade coffee
and continues today.
Sisters' blend, a coffee that was developed
specifically for Women of the ELCA in mind is still
available.

Divine Chocolate
Panna Cotta
with Divine Cocoa whipped cream
Recipe by Selcuk Once
Divine Cocoa Whipped Cream:
1 cup heavy cream
1 tbs. Divine cocoa powder
2 tbs. confectioners' sugar
Divine Chocolate Panna Cotta:
1 1/2 cups heavy cream
3oz Divine Chocolate, chopped (Divine Dark,
Divine Hazelnut milk, or Divine milk.)
3 tbs. sugar
1 tsp. powdered gelatin
First add the cocoa powder to
the heavy cream for the cocoa whipped cream.
Stir well to combine then cover and refrigerate
for 1 hour.
Begin preparing the panna cotta by placing the
heavy cream, chopped chocolate, and
sugar in a small saucepan over medium-low heat.
Bring to a simmer, then turn off the heat and
steep for 6 to 8 minutes.
Add the powdered
gelatin and
using a whisk
stir over low
heat to warm the
mixture and
dissolve the
gelatin. Do not
let it boil.
Strain the
mixture through
a fine sieve
(this to remove
any undissolved
gelatin, maybe
skipped and not
recommended with
hazelnut milk
chocolate
recipe) then
pour into
individual
espresso cups.
Cover with
plastic and
refrigerate
until set, about
1 hour.
Once you put
these in the
refrigerator you
can finish
preparing the
cocoa whipped
cream
(alternatively,
you can do it
just before you
serve the panna
cotta). Whip the
cocoa cream
until it begins
to thicken and
then add the
confectioners'
sugar. Whip
until soft peaks
form and serve a
spoonful over
each of the
panna cotta
servings.

Fair trade
coffee
The Equal
Exchange coffee company began promoting fair trade-certified coffee in 1986. Currently they partner with
faith-based organizations such as Lutheran World Relief
to distribute their fair- trade coffee, teas, almonds and
cocoas. The LWR coffee project and Women of the ELCA
have participated.
